Habersack

A "Habersack" was made from linen or sacking and was used to carry food, especially bread and cheese or other dry food.

It was also a bag to hang around the horses neck containing oats to give it a snack! Haber is dialekt and means Hafer=oats. Habera is a very, very, old way dialekt word for "eating"!


Organic ingredients to bake bread



Flaxseeds very high in Omega 3



Ground flaxseed. I use a spice mill to ground the seeds.


Kneading the dough with a "Kitchen Aid". Great!

The finished baked bread. It smells wonderful. Like bread should taste and smell, wholesame!


My recipe for wholemeal-or Ryeflour bread

250g organic unbleached plain flour
250g organic wholemeal flour (or rye flour)
1 tbspoon whole flaxseeds
1 tbspoon ground flaxseeds

1 tbspoon Pepitas (pumpkin seeds)
1 tbspoon sunflower seeds
1 and 1/2 teaspoon dry yeast
2 teaspoons sea salt
320 ml water it might need a tiny bit more it depends on the flour. Ryeflour usually needs a little more water. The dough must not be sticky.
Mix all the dry ingredients together add the water and kned by hand or machine.
When the dough is ready let it rise in a warm place until at least double in size.
Form the bread to your liking and bake in a hot oven 220 C lowest shelf 35-40 minutes.


This bread freezes very well. I cut it in thin slices and freeze it.
